Bacchanalia and Apollo’s Muse have launched Palette, a new cocktail collection that is as much a design object as a drinks list. Presented in a specially produced magazine, the range turns the restaurants’ interiors into a sequence of cocktails, with each serve linked to a specific colour, surface or decorative detail. According to Bar Magazine, the idea is to let guests experience the venue through a different lens, with photography and short narratives adding to the sense of theatre.

The concept fits Bacchanalia’s existing identity. Studio Anika, which worked on Apollo’s Muse at Bacchanalia, describes the space as a lavish celebration of Greco-Roman references, original statuary and contemporary art, while Palmer Lunn says the restaurant draws heavily on mosaic work, marble, limestone and carefully layered finishes. For diners, that means the cocktail menu is not simply decorative branding; it is designed to echo the room itself, which already leans into a highly stylised, destination-dining mood.

The drinks are built around that visual language. Onyx pairs vodka with citrus, tamarind and aloe vera; Mosaic brings together gin, tequila, basil, apricot and warming spice; and Rosso Levanto uses clarified tequila with blackcurrant, prune and pomegranate. Emerald follows a greener, lighter route with gin, apple, cucumber, fig leaf and prosecco, while Sapphire blends whisky with peach, chinotto and bergamot. There are also alcohol-free options, including Verde, Amber and Iolite, which means the concept is not limited to full-strength cocktails.

For travellers or local diners deciding whether it is worth booking, Palette appears to be aimed at guests who value presentation as much as flavour. Xavier Landais, Bacchanalia’s director of beverage at Caprice Holdings, said the project reflects the creativity and craftsmanship that define hospitality at its best, and that the team wanted to present the restaurant from a fresh perspective.
